Looks more like the carpet that sits upright behind the seats against the firewall. Could normally be hidden behind the arrest.

Although your car may be registered in an 05 plate, it would have been an 04 Model Year (MY) car. It was the 05 MY cars which had a glass screen, they were built from late 2004.
If it has a switch then you should be good to go. All cars had the wiring, but not the switch and relay.

Sometimes you need to move the steering wheel a fraction to release the lock. It won't move in one direction, but if you turn it the opposite directio it will release.

Not had an issue with an F or TF, but the light switch on my BGT can sometimes not work if unused for a period as the contacts become dirty through no use. A few on / offs tends to clean the contacts.

Went to fit a hard top to our F which lives outside as the soft top was nice and dry in preparation for winter. Yes, however disconnect the battery first and leave it for 30 minutes to allow the air bags to discharge. You will also need to disconnect the electrical connectors under the seat.
