Depends on what you want to do with the car, export it to the UK or have it on local plates.
For the first you might have a look on the higher taxed countries (Holland, Denmark, Sweden ect) as there might be refund options on the tax part. (Probably only a small amount of money as the cars get older)
To have the car on the continent you'd consider buying is not the difficult part, moving it from one to the other is a different story. As common in the EUregulations varyfrom country to country. You must be prepared, I'd never advice to drive on Belgium plates (if you have the choice) simply yust because their MOT is extremely strict.
A country with relative good prices is e.g. Germany. But be aware prices are not on the UK level.
As being Dutch I have 2 cars first registered in Belgium, and, recently only, one originating from Germany.

Why do you want a LHD?
They are much more expensive than the RHD version.
I have driven loads in europe in RHD and it isn;t as bad as you'd expect.
