It is less difficult than you think, because until the glue has fully cured, you can peel apart and reapply.

I haven't checked, but perhaps a ZR or ZS (R25/ R45) wiper motor might be an option, as they will likely have the same internal wiring as the one used on the MGF/TF

Definitely feasible. I did the swap the other way, with TF seats into a 1995 MGF. Depending on the year of the car, it can be plug and play, otherwise either swap connectors, or swap over the seatbelt anchors from the existing seats to the replacements.
